Lembas Bread Recipe

Inspired by JRR Tolkien's Lord of the Rings Series

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter room temperature
  • 1/3 cup brown sugar
  • 1 tsp cinnamon or more to taste
  • 1 tsp honey
  • 2/3 cup heavy cream or milk
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Whisk together flour, baking powder, and salt in a bowl.
  • Cream butter, brown sugar, cinnamon and honey in a separate bowl.
  • Mix in heavy cream and vanilla extract into butter mixture.
  • Combine wet and dry ingredients to form a dough.
  • Roll out dough on a floured surface to 1/2 inch thickness.
  • Cut into small squares or triangles. Use a knife to make an "x" imprint on each square.
  • Bake for 12-15 minutes until golden brown.
  • Cool on a wire rack.
